Reservations will be taken for parties of six or more. Your reservation will be held for 10 minutes beyond the scheduled seating time. If, after 10 minutes, we have not received a phone call or no one in the party has shown up, we will release the table.

It's been a while...
Obviously, it has been a while since posting and we apologize for that. We have been working away on all the end of the project details that, not surprisingly, take time and money. We are finishing up and waiting on inspections from the Fire Marshall and from the Health Department. We had some major plumbing service done during this week for fixes that are necessary for us to get the sign off from the Health Department.
We are working on our computer system that will track orders and sales, give us the ability to issue gift cards and Founder's Club cards. It will track our inventory and tie it to menu items so we can control costs and build in efficiencies in our ordering processes. It will also serve as our scheduling system for our staff allowing them to log in and log out on the computer and receive full reports on their performance during each shift.
We have had requests for certain favorite items to appear on the menu and Denise is now doing her homework and working with Greg and Levi on a recipe for Gumbo which many of you have asked for. Our first open week we will be serving a set menu just to give ourselves a chance to settle in and get all the systems in place without overwhelming ourselves with too many variables. We realize that there will be gaffs and disasters (minor, we hope!) and missteps and hope that as we bring ourselves up to speed in the first weeks you will give us ample opportunity to correct any mistakes or inefficiencies that we discover. This is a natural part of opening a new establishment. There will be a learning curve in every aspect of what we do, and we will welcome your feedback on how we can serve you well.
So, right now, the front part of the restaurant is just a few details away from being ready to go. Table cloths, all the right silverware, glassware have been ordered. The back dining room still needs a face lift and probably will not be open immediately. We do intend to have that room open as soon as possible for overflow seating and large party dining. Many of you have asked if and when it will be available for meetings and the like. Since we are a dining establishment, and we depend on having as many tables as possible available of dining customers, we will keep that room for dining purposes. That said, if you are interested in booking it for a large party dining experience it will certainly be available but we will not be reserving or closing it for meeting only purposes.

Paint!
If you have peeked in the windows recently you will see that we have been painting inside Dixie Girls. If you have not had a chance to come sneak a look here are a couple of photos that give a bit of an idea about our interior progress.
First the seating area up near the front windows:
Now that the paint is done the tile and the carpet are going down. That should be finished this week.
And here is a view of the bar area.
As you can see, the old bar top has been removed. The bar base has been extended and now awaits the new bar top.
This area will also accommodate counter seating for lunch for those who prefer to come in to grab a quick bite before heading back to the office.
And finally, the VIP seating area! A very special luxury accommodation for those customers who want enjoy absolutely the best that will will have to offer.

Why is the Bee our logo?
Denise has chosen the bee as our logo and I thought I would share with you some of the reasons why.
The mythology of the bee is illustrative of how we will do business and how we should and will work collectively and cooperatively with each other and in our greater community.
In mythology the bee has been symbolic of many things.

- In ancient times the bee was both a symbol of royalty/kingship and unity.
- Honey bees, signifying immortality and resurrection, were royal emblems.
- In heraldry, the bee symbolizes diligence and indefatigable effort. Someone is said to be busy as a bee when he or she works tirelessly and regardless of schedules or breaks.
- A community of honey bees has often been employed by political theorists as a model of human society.
- This metaphor occurs in reference to at least one of the most well known ancient Greek philosophers, Plato. Bee symbolism:
As the workers of the hive, bees are symbol of an industrious and prosperous community governed by the queen bee. (That would be Denise!)

Ready for Paint
The drywall is now complete in the interior.
Tomorrow we start painting inside!
And outside we have taken down the old awnings. It makes such a big difference inside. More light streams in and it no longer feels quite so closed in and it opens the view out the large roll up windows considerably!
We plan to have outdoor seating to serve as many as 40 guests which will spill out on to the front sidewalk you see here.
